Denny Meat Free Sausage Pasta Bake

Ingredients:
- 4 Denny Meat Free Sausages
- Olive oil
- 1 shallot, finely diced
- 3 cloves garlic, minced2x
- (400g) tins chopped tomatoes
- Salt & pepper
- 400g dried penne pasta
- 50g breadcrumbs
- 50g grated vegan cheese
2 tsp chopped thyme
Instructions:
- Preheat oven to 200°C / 180°C fan / gas 6.
- Cut sausages into 4 pieces then add to a large pan heated over medium heat with a drizzle
of olive oil. Cook through then set sausage pieces aside in a small dish. - In the same pan over medium heat with a drizzle of olive oil, cook the shallots until tender.
Add the garlic and cook for another minute. - Add the tomato and season lightly with salt and pepper. Bring to a boil over medium high
heat, then reduce heat and simmer, stirring occasionally, for about 10 minutes. - While the sauce is cooking, follow the package instructions to cook the pasta.
- Once cooked, drain and tip the pasta into a large baking dish.
- Add the cooked sausages to the pasta, taste the tomato sauce for seasoning and add more
salt or pepper if needed, then spoon this over. Toss everything in the baking dish so that the
sauce is well dispersed through the pasta. - In a small bowl mix together the breadcrumbs, cheese and thyme. Sprinkle this over the top
of the pasta then bake in the pre-heated oven until sauce is bubbling and the top is golden,
about 15 minutes.
Rest for about 5-10 minutes before serving.
